Sometimes I get to think that I'm pretty lucky...
A few weeks ago I was visiting Diego at his work, his boss told him that they were going to visit a friend of hers so Diego could take a few pictures of some dishes. When we arrived it was love at first sight. I dom't really know why, but that house has the perfect ilumination, so I tried to take a few pictures myself. The deal with the food and the photos was that they needed to add new dishes to their menu. Yup, Diego has to do a new menu for Mokafe. Isn't exciting?
Bruschettas (Different ingredients) Serves six.
1 Tomato (Diced)
1 Tomato (Sliced)
1 Cup Caramelized onion.
1/3 Cup Parmesan Cheese.
1 1/2 Cup Mozzarella Cheese.
1/2 Cup red pepper.
1/2 Cup mango.
1 Tablespoon Butter.
4 Tablespoon Olive oil.
1/2 Cup mushrooms.
1/2 Cup olives.
Serrano ham.
Bread.
Alfalfa.
Garlic.
Pepper.
Basil.
Prepare de onion first, cut it into slices and then throw it in the pan, add the butter, some pepper and a chopped garlic. Leave the onion until it gets a brownish color. Continue with the mushrooms, throw 'em in the pan, add some smashed garlic, basil leaves, a tablespoon olive oil and pepper. When the oil starts to dry, turn off the heat and leave them rest.
When it's done, leave it aside and continue with the bread; you'll need to cut it into slices, add some olive oil, get the slices in the oven and let it toast.
This is a very easy recipe, the next step is add your favourites ingredients to the bread.
We made four combinations, I think this is the fun part of the recipe, discovering new flavors through different ingredients!
Serve your bruschettas with a small tropical - mango - salad and it's all done. Enjoy!
